I’m super excited to share these ginger molasses cookies, as they were a childhood favourite of mine and, I’ve finally perfected them into a vegan recipe!

What You’ll Need:
- 3/4 cup coconut oil (Melted)
- 1 cup brown sugar (or unrefined alternative)
- 1/3 cup molasses
- 1 flax Egg (1 tbsp flaxseed + 2 tbsp water per ‘egg’)
- 2 1/4 cups sifted flour
- 2 teaspoons Baking Soda
- 1/2 teaspoon salt
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
What To Do:
Preheat oven to 375F.
Make flax egg by mixing together flax & water & set aside for 2 minutes until gelatinous.
Mix together first 4 ingredients until fluffy.
Sift together dry ingredients and add to molasses mixture.
Roll into balls and coat in granulated sugar.
Place 2 inches apart on parchment paper.
Bake in oven 8-10 minutes.
Cool slightly & remove from pan.
