Hi loves! I’m super excited to share these ginger molasses cookies, as they were a childhood favourite of mine and, I’ve finally perfected them into a vegan recipe! I hope you love them as much as I do! Sharing the written recipes for you here as well, in case that’s your preference. What You’ll Need:
  • 3/4 cup coconut oil  (Melted)
  • 1 cup brown sugar (or unrefined alternative)
  • 1/3 cup molasses
  • 1 flax Egg (1 tbsp flaxseed + 2 tbsp water per ‘egg’)
  • 2 1/4 cups sifted flour
  • 2 teaspoons Baking Soda
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
What To Do:
  1. Preheat oven to 375F.

  2. Make flax egg by mixing together flax & water & set aside for 2 minutes until gelatinous.

  3. Mix together first 4 ingredients until fluffy.

  4. Sift together dry ingredients and add to molasses mixture.

  5. Roll into balls and coat in granulated sugar.

  6. Place 2 inches apart on parchment paper.

  7. Bake in oven 8-10 minutes.

  8.  Cool slightly & remove from pan.
